Maybe try a substrate other than agar? I had the most success by inoculating a PF-Tek Brown Rice Flour + Vermiculite mixture, allowing the jar to fill with spawn, and then transferring that spawn to a tub full of coconut coir. That was an extremely easy process. The spawn took a long time to grow because the BRF+Verm mixture isn't as readily nutritious as agar, but at the same time that means it isn't as nutritious to bacteria.
I dunno. I never understood the use of agar for anything other than attempting to clone mushroom tissue or isolate specific spore lines. It's too easy for bacteria to grow on it; if you're just growing for consumption, grain, BRF, or other substrates are perfectly suitable for psilocybin mycelium while being more hostile to bacteria and other contaminants.
