Film back then had an ISO of 400 at best, and to see stars at ISO 400 even with a rather fast lens, you need to expose for several seconds.
And to do so, you need a tripod.
They did however take pics of stars with New Horizons, wich is now beyond Pluto.
A small parrallax can be seen when looking at realy close stars, but on the moon it's the same as on earth as it's so close to earth.

Space telescopes work that way, but if your capsule has any windows on the sun side or some lights running, you're unlikely to see stars.
