Yet both Ahab and Black Swordsman Guts are tragic figures and I see what you mean. Guts really lost it during Black Swordsman arc, though you could see rays of his human, GA personality shining out when he cried at the end because of what he did to Theresia. That's the subtle difference between him and Griff, who doesn't break character as Femto.
I have heard the comparisons to Moby Dick a lot, some say that Miura liked the imagery of the main character chasing something white and symbolic with an obsession. I suppose the main difference is that Griffith is not "a dumb brute...that simply smote thee from blindest instinct," he understood what he was doing. There is honestly a lot of layers even to their archenemy relationship. Griffith has an odd mixture of inhuman apathy with a trace of bitterness, Guts' sees him as a symbol of all he hates like Moby Dick but also still wanting his recognition as a rival etc
