Someone said that Gwyn was just burned as kindling material rather than actually hollowed since lords can't go hollow but I don't remember the reasoning behind it.
Since souls are more or less the life force of hollows, it would get split whenever there is a child. The dark soul would split and split giving birth to humanity, while the gods had few children if any.
In theory, the descendants of Gwyn, born from mothers capable of hollowing, would eventually hollow themselves, returning them to their natural state, but because lord souls were so powerful it would take a lot longer for a god than a human to hollow.
