Kanji: Learning to knit with him. Him sorting through the complicated feelings of being attracted to men as well as women (he's realistically bi not gay). I also think his shadow would come into play and discussion of how even though he likes dudes it doesn't make him any less manly. He likes what he likes and no preconceived notion of manhood is going to stop him.
Yosuke: Probably also dealing with the acceptance of being attracted to men as this route would have him being a deeply closeted homophobe with the added stress surrounding his role as a successor to Junes. Perhaps fear of being seen with the MC out in public due to this takes a toll on their friendship.
Teddie: More light-hearted route. Fun shenanigans involving him not understanding normal social conventions not to mention romantic ones. Lot's of awkwardness as he's a horndog, but it's all good intentioned and seeing as Souji is someone he looks up to he respects your boundaries after being talked to. The arch would probably be him getting a better understanding of acceptable social interactions.
Personally if someone were to mod in gay options I also would like the option for all male characters including the non-party member social links like Naoki, Daisuke, and Kou, but I've got no ideas for them right now.
