The most prominent names for East Asian Sakana fanart are gimogoblin, jamjyamoon, act1555, shishirota46, toroniku_matsu, chi (Pixiv user 30381344), pipefield, GyuUum_Planet99, Pixiv user 10680117, Sora Mako, marimomokuzu, kai_fish_y ... and OK, fine, sebs6666, and dt_tmn_skn.
Each of them have their strengths and weaknesses as fan artists
gimogoblin : renders cast in a pretty standard, realistic (i.e., not cartoonish) sort of anime style. Easily in the top 5. Art's real professional-like. Characters look damn attractive, most especially their Taro, who's so hot it hurts. Apart from the best Taro, also has, and I know nobody else cares but it's still good to know, the best Chie
jamjyamoon : some of the best Taidai. Style's real soft and sweet, especially with its pastel colors and fuzzy shading, like the music to Korean soap operas
act1555 : style kinda similar to gimogoblin's, but rougher, cartoonier. Dudes drawn a bit more masculine. Probably has the best Jan - pretty like in other fan art, but still masculine, not a total ????-lookin' uke pretty boy. Really into Jirodai
shishirota46 : cartooniest so far. Issue with everyone having the same face shape - which sorta misses the point
toroniku_matsu : really good Taidai. Comic panels really clean. Best lewds
chi's (Pixiv user 30381344) : bias is Yuudai. Way they draw him emphasizes his softness, frailty. A treasure if you're into that. Probably the best Aradai, Shigedai
Pipefield : hands down, best coloring. Art most polished and professional. Relatively masculine Taisei. Very much appreciated. Once made closest thing to the holy grail - Sakana guro
GyuUum_Planet99 - some nice chibi. I don't have too much from them, so not sure what else to say
Pixiv user 10680117 : generally quite cute. Ton of Jirodai. Also misc. fan comics - I do not at all get their plots
