Kanto - Red is 11 per press info including the manual. Presumably, so is his replacement Chase in LGPE.
Johto - Gold was probably 11 originally (unstated, but manga used it and tended to have insider info from the devs) but shifted to 12 in HGSS with his Ethan redesign (per internal docs from the Teraleak).
Hoenn - Brendan was also likely 11 originally in RSE, but he is stated to be 12 in the in-game trivia for ORAS.
Sinnoh - Lucas is 12 according to the internal docs and seems to be the turning point where 12 became the new 11 with the Gen II and III protags getting aged up in the respective remakes.
Unova - Hilbert is 14 per early Japanese-only press info. Nate is 12 per internal docs.
Kalos - Calem's age is not given and interpreted as a mid-teen. Manga gives his age as 12, and internal docs place his friend group at that age, so the teen implication was a fan misinterpretation.
Alola - As a Gen I throwback, 11 returns for Elio in both versions.
Galar - Victor and his rivals don't have known ages from the leak or in official material. Based on past patterns, probably 12 but could be 14.
Hisui - Rei is clocked as 15 by Cyllene and the fanbase rolls with it (technically, given the maturation differences between Meiji era Japan and Reiwa era Japan, he could be 14 instead--may also be an older Lucas as well).
Paldea - Florian is definitely young looking but nothing confirmed officially or through the leak. If Victory skews towards 14 on the 12 or 14 meter, then Florian feels like he skews towards 12.
Luminous - Paxton and his crew are very clearly teens but no ages given. Possibly 15 like the prior Legends protag but might also be slightly older.
At the very least, the mainline games will be sticking with 11-14, but Legends might be 15-18. GF has said that they market Legends for older fans while the mainline is primarily targeting kids.
