Because form is the most important thing when it comes to anatomy, and should be stressed by teachers. What did you want? A how to render the 6th cervical vertabrae? It's better if you actually knew how to turn it in 3d space than it is to know how to render it in only one or two positions. There are so many people that know the anatomy of the quadriceps but cannot draw it from an overhead view or from below. Form will save you, not minor details that have no structure to lay on top of.

I feel like most art teachers are absolute shit at explaining their subjects. Art is a complex subject, and it's a lot like learning a language, except it's like 4-6 different languages that are mildly similar but no one has actual one to one translation dictionaries so they're all doing these wild mass guesses about how to say stuff in english in a way that'll make sense but no one can actually make sense to everyone the first time, but the only real way to learn is to jump in with both feet and do all the ground work yourself

Depends, in my specific case I made massive anatomy gains in muscle connections. I almost disregarded out right muscle shapes initially.

There are very useful shapes that come from the knowledge of muscle groups. Teachers tend to try and cram all information relating to the topic in one lesson otherwise it becomes confusing when there is say 11 videos on the shoulder girdle. So it's up to you to dissect the information you need at level you are at or the problem you are facing in that moment.
