Good shading, anatomy and perspective skills impress normies. The appreciate good values and color theory only subconsciously. (Something looks nice, but they don't know why.)
Age plays a big part in this. Boomers are more likely to enjoy full realism, traditional paintings, scenery etc. while zoomers like anime and cartoon influenced stuff.
As a rule of thumb, normies like the shit that they would draw if they had the skill: Eyes, pets, celebrity portraits etc.
