I'm a drawer, not a painter, but I have tried to learn a lot so take this with a grain of salt.
The best way I learned how to paint skin was to do it with actual paints, though I am a digital artist, I still apply the same principal in digital painting.
I think skin is made up of these four paints - yellow ochre, cadmium red (orange red), titanium white and burnt sienna (brown). As the skin gets darker, you add more brown. This is important because if make the skin grayer as it goes into shadow, like most objects do, it looks dead and gross. Simultaneously if you add more white every time when the skin gets whiter it also looks dead and gross. With skin I think you make the local color a somewhat muted tone, then make the highlights and shadows slightly more saturated depending on the environment.
