All of those are arts, sure, but the more mechanical/technical it is, the further it is from art I think. Animation, designs, cartography, architecture... those are all very methodical and can be emulated by anyone; the uniqueness, the expression of the self is at a minimal while still being art.
Writing, doing music, performing at a theatre and coming up with wacky fashion design choices to express your true self, those are the most pure arts I think.
For illustration it depends on your approach. Once I read here that an artist and a craftsman are different things, or something like that. There's people drawing to truly produce new art, and those others merely using techniques to try to emulate reality as mathematically accurate as possible like a living camera and those aren't really doing art.
