Most hunting shotguns are either break barrel or pump action, although semi-autos exist (I have some of each). Hunting rifles (save for 22's) too also tend to have relatively small internal magazines and are more often bolt action.
They're usually cheaper, more mechanically reliable, and more accurate since a hunter doesn't need to be to be able to squeeze of five+ rounds in rapid succession for anything other than small game.
It's also why most sniper rifles have been re-purposed hunting rifles for the longest.
Anyone who insists they need an AK/AR style rifle or a semi-auto handgun for hunting is just trying to bullshit you. More like they just enjoy firing at the range, shooting shit with friends in the field, or feeling like an "operator" or cowboy.
