The thing you're not understanding is how incredibly deep the deck was stacked against the heroes from the beginning.
Did Pyrrha's mental state during the Penny match effect how she reacted? Yes. But this is ignoring the fact that Ozpin was pushing for her to to participate in the tourney to maintain the veil of normalcy and how powerful Emeralds illusions are.
Yang is a hothead but she was also at the end of the Mercury fight in a state of euphoria over thinking she won and through implanting an illusion in her head Emerald was able to get her to punch Mercury in the legs.
Even if Pyrrha wasn't in the mental state she was in, Emerald could have still overwhelmed her with illusions to still end with her killing Penny. Remember Penny is a robot and Pyrrha's powers are explicitly designed to fuck penny up.
And beyond that, this scenario has Jaune immediately coming to grips with the situation he has now been thrust into to the point where he can be an emotional anchor for Pyrrha in the span of maybe a couple of hours. Jaune is a decent guy, a good guy but you really think he wouldn't at least ask for a bit of time to himself to try to come to grips with what he now knows? And what would that do to Pyrrha's mental state if Jaune, as we've been shown he does, slightly panics and voices what immiedtly pops into his mind.
Jaune not knowing directly lead to Ruby getting her silver eyes and at least temporally pushing Cinder back.For all we know him knowing would have made the entire situation go far worse and get him and Pyrrha both killed, not to mention everyone else.
Ozpin letting Jaune in on the secret is the most idiotic idea of the bunch. Because Pyrrha was always going to have second thoughts and fears and Cinder and Crew would have set in place their plan and fuck over the city one way or the other.
