He also died to a zombie virus in an alternate dimension. It didn't turn him into a disease-proof alien then.
He was also obliterated along with several alternate universe versions of himself by a Chronosapien Time Bomb.
It doesn't even work like people say it does in the scene that claims it's a thing. Ben changes into one alien, then it rapidly switches from form to form before the universe explodes in his face until Ben suddenly finds a form that can survive the universe exploding in his face, which turn out to be Feedback whose power has suddenly switched from "absorb and release electricity" to "absorb any kind of matter and energy with no limits".
And then Ben says that the anti-death failsafe has always been a thing because he noticed the Omnitrix has always given him the form he needs even when he didn't know it, like when it made him a fish in the middle of the desert or when it made him a vampire outdoors in broad daylight. Apparently it was yet another attempt to re-explain the Omnitrix giving him the wrong forms, which yet again resulted in it making less sense than it did before.
It just plain doesn't make sense by any logic, not even its own.
