That's not an apocalypse, just a map that shows some bad stuff happened (or that geography is just different.) Humans are still clearly around and thriving, as is the same nature. Apocalypse kind of needs things to die off.

This. In religion and mythology, we've also got a lot of apocalypse scenarios, like Noah's Arc, so I guess that makes Prince of Egypt about as "post apocalyptic" as Steven Universe.
