1/2 cup diced onion (optional)
2 tbsp salted butter
2 tbsp unbleached all-purpose flour
1 1/2 cups low-fat milk
1 tbsp Dijon mustard (1/2 with coarse-ground)
2 cups. grated sharp cheddar (roughly 8 oz)
1/8 tsp each white pepper, ground nutmeg
1/4 tsp salt
1/8 tsp MSG (optional, but increase salt to 1/2 tsp if unused)
~1/4 tsp Tabasco or other hot pepper sauce
8 oz macaroni noodles
~2-4 tbsp grated parmesan
~1/2 cup sharp cheddar
o Melt butter in a large pot/saucepan on low; simmer onion till soft, not brown. Stir in flour, remove from heat.
o Whisk in the milk until blended. Return to medium heat. Cook and stir until mixture begins to thicken. Remove from heat.
o Stir in mustard, 2 cups cheddar, salt/pepper/nutmeg/tabasco. Adjust seasonings to taste.
o Meanwhile, cook pasta; drain; stir immediately into cheese sauce until blended.
o Place into 9x13 baking dish, top with cheddar and parmesan.
(Optionally, double the recipe and add diced ham here.)

o Preheat oven to 400; place dish in bottom third, bake for 15-30 minutes or until golden.
