>Tell me, what special traits does Dipper have that make him a deep character?Dipper is a character mostly defined by his insecurities. He's representative of that awkward phase when you're just entering puberty and everything is out to get you. He's desperate to be seen as mature and intelligent, but while he is those things, relatively speaking, he's also a little myopic and very much obsessive in the way he handles things. A major part of his arc is about not really shrugging off his insecurities, but about accepting them and getting on with things. He has a strong sense of right and wrong that sometimes veers into 'correct and wrong'; he likes things to be done the proper way, he likes things to be fair, and he often feels cheated when they aren't.
>Or Steven?Man, where do I even begin? The amount of character progression Steven has gone through is pretty incredible. When I first started watching I hated him, but, like a real person, he grew. When you get down to it, Steven is someone who loves life and wants others to love life as much as he does. He starts off pretty naive and kinda weak willed (and obnoxious), like kids actually are, but as the series moves on he begins to find a more balanced persona. He becomes responsible, he becomes self-sufficient, he learns to make compromises and that he can't always save the day. He's an idealization, but he's not a bad one.
>It's currently one of the most watched cartoons amongst adultsYes, but parents sitting with their kids. I can guarantee they're not interested at all in what's going on in some generic poop joke cartoon. They're interested in spending time with their kids.
