By cutting the provisions and patrons of the Confederate army out from under them, the North would force a surrender while there would still be a South to rebuild.
Of particular note is how Sherman targeted the wealthy, who were basically drawing in non-English speakers off the boat and slaves to fight the war for them. By sticking their feet in the mud, the South lost its most nationalistic support.
By contrast, the Firelord plan was to destroy everything that wasn't the Fire Nation for wxtactly that reason; destroying everything but the Fire Nation.
