I don't know about humans, but i have read about rehabilitating starved animals.
When an animal has been starved for too long, its digestive system shuts down and any food it eats is just gonna rot in its belly, so you have to give it infusions to restart the digestive process and special predigested feed.
For a not-so-starved animal you have to give them small amounts of normal food regularly. If you let them eat as much as they want, they can overeat to a point when their stomachs burst (a common mistake for well-meaning but uneducated people).
anorexia on the other hand is a combination of different behaviors - starving, puking, overexercise, drugs etc., and delusions - thinking that their bony body is beautiful and anyone who says otherwise is just jealous.
So rehabilitating such a person is trickier because the source of the disease is psychological.
