I never understood why they decided to expand disco Stu and reuse him so much. He was just a single one-off joke in one episode. It didn't need to go past that.

I think it's part of living in the disco era and then seeing that subculture absolutely vanish that made it hilarious to them. So much of the early pop culture gags were how silly 70s culture was.

I never understood the 70s references but still laughed like crazy when Homer said "Starland Vocal Band? They suck!"
