Somehow one nation had all of the tech and a giant mechanical drill that breaches earthbender city walls in a world where coal power was still revolutionary, people still lived in mud huts and where the greatest earthbender cities had to rely on gravity for quick transportation.
It's bullshit writing that only exists for the sake of allowing the fire nation to be at the brink of winning the war.

Telling the story of the very first Avatar is by definition expanding the lore and your favorite character getting axed in order for the story to make its point and become its own thing instead of a simple retelling is actually a good thing.
Moreover nothing about bending was retconned. Lion turtles gave some people the ability to bend and then went away while some animals plus the moon spirit taught people how to properly do it.
