The truly unfortunate thing is it absolutely can work as a slice of life show. Let's say Eda is making a potion and tasks Luz with gathering an elusive ingredient from the forest where she has to pay attention to tiny clues in order to find it. That's something that can be engaging without having the beats of an action adventure, but it requires a level of academic understanding, curiosity, and research that the show completely lacks.
