What happened to the school life genre or cartoons? There weren't many, Flying Rhino Jr high, detention, kids from class 204, FILLMORE!, recess, and detentionaire to name a few. What was your favourite? Do you have any ideas for modern day?

What happened is producers realized it was easier and cheaper to just make a dozen live action kids doing "wacky" things in sitcom series. There must've been at least 30 of them in the past 15 years. Probably more, but fuck if i ever wanted to pay attention to any of them.

And also because there are hundreds of "school" animes.

It kinda got done to death and killed off by a wave of people putting less and less effort into the setting other than saying 'lol school sucks XD'. It can work as long as you do it well enough people can relate to the characters beyond just the bad experiences they had. Just make school an interesting seeing either through the characters or making the school itself unique by adding a new twist on the old formula. And I mean beyond the whole 'Boy goes to all girl school' fetish fantasy.

Like say, the school is actually a Multiverse academy where all the students are protagonists to their own Universe or 'Show' and need to learn how to be interesting main characters. That story could be about a young man from a mellow slice-of-life cartoon aspiring to become an action Hero and life an exciting life, so he ditches her boring class to learn to fight monsters and maintain a long term plot that interest the audience.
