So what would happen if you somehow managed to permanently separate Steven from his gem?

Would the gem form gain a personality of its own over time?

From what we've seen, Pink Steven seems to be essentially a symbiotic entity with Fleshy Steven. His body doesn't look like a normal Gem's, but instead sorta what the Gem is accustomed to seeing as its light form: Fleshy Steven's body.
I'd wager that Steven, if he won't die, will be severely cripped because of now missing a chunk of his stomach and no doubt a source of his body's resilience, and Pink Steven will remain pretty robotic. It's essentially a weird combo of an endoskeleton, an exoskeleton, a pack of weapons and a life support system. Seems like there isn't much space left for personality or mind with all this weaponization.

Rebecca has shitty worldbuilding because Gems only cause entropy by reproducing and are sudo-immortal. They don't age, they have no need to eat, can go without sleep, only need to rest when they suffer damage to their gem/lightform, and they're naturally tolerant of extreme climates. The only thing close to death is shattering and even then they're still "alive" as the shards try to crawl back to each other to reform.

Steven's nepotism powers has temporarily stopped the Diamonds from devouring planets like the viral parasites they are but until they go back to colonizing or someone shatters them then they will live forever.

If you actually pay attention to the show you'd know you were correct, we specifically see that old age will kill Steven's body since he is very much mostly organic. In fact he's more than "mostly" organic he is 100% all organic except for the gem which is like his Superpowers Organ. Steven can't control his age intentionally it causes shapeshifting strain trying to change into something he doesn't identify as, even trying to look a couple years older was causing massive amount of strain.

But then Sugar went on record saying Steven would need to "choose" to die that otherwise he'd just keep living like any other gem, which doesn't actually make sense. I think she realizes the implications that would happen upon Steven's death and the massive ripple effect it would have on the rest of gemkind.
