In fact, there's no actual, believable explanation for any of his actions the canon has provided to this day. His mutilation of himself into a horrific super-strong cyborg and every atrocity he committed from then on was driven solely by the grudge of not being accepted into the Jedi Order, and am I supossed to believe that?
Hell, not even integral parts of his character design make sense according to the canon character.
Replace all your limbs with enhanced, mechanical ones? Alright. One can get behind that.
But for the love of God, why would anyone choose to go as far as to lose half their face and become a bunch of organs in jar? Where are the practical benefits in any of that?
This used to have a logic when Grievous was conceptualized as a glorified slave warrior for the CIS rather than an actual individual fighting for his own benefits.
It makes sense Sidious and Dooku would order to have him designed to be as useful in combat as possible while also making his own life dependent enough on them in the case he ever went rogue.
But when it comes to the canon character, nothing of this is taken into account.
The "true" General Grievous might still have some charm on his own, but it pales when put in comparisson to the much more thought-out character of the old EU.
