how important is jessica to the rick and morty timeline?
seems odd that all the morties in every timeline never gets with her

All the universes are parallel, so there's no telling if some Morties don't eventually get with Jessica or at least move on past her.
Also, have to consider that these are all Morty with a Rick. Maybe it's his presence that makes it such a constant, and all the universes of Rickless Morties have a bigger chance.

She is essentially Morty's Beth. Remember, Beth dated jerks in high school until Jerry came along and was actually nice to her, but then he got her pregnant and Beth's been harboring a not-so-secret resentment over the fact that she got stuck with a guy who turned out to be a big fat loser.

Consider if it wasn't for his constant experiences with Rick, Morty would absolutely become Jerry, if not worse.

This is a comic, so the show will probably never acknowledge it, but in Rick and Morty infinite universe the comics are somewhat canon in it of themselves since every eventuality is a universe.

Up to him, he's essentially Rick's apprentice so he can gather skill now and apply that to his life after or he can just be a burn out loser who gets a minimum wage job and struggles his whole life.

There is a Rickified Morty in the citadel of Ricks. So Morties that become or grow into someone like Rick isn't out of the question.

It's probably most likely that Morty dies young. Since we're following 'the true Morty' this probably isn't going to be the case for him.

Rick also mentioned that Rickless Morties will end up living normal lives. This probably won't be true for our Morty, who has already experienced too much.
