Or put it this way, why is the +1$ bid any different than someone bidding $1250 and the next person bidding $1350? Any higher bid cuts off the lower bid's potential winning range, be it $100 or $50 or $10 or $1. This is the fundamental nature of the game. And there are times when closer ranges are better choices. (you cant do the +$1 trick if you're the next-to-last bidder as the last could do the same to you, for example)
Do you people get mad when, say, teams ahead in scoring shift to a more defensive strategy? Does that irk you? What is it about situational strategy you don't like?
