It's the same reason why stupid people adore The Joker; self inserting fantasies. You see by liking Rick and regurgitating his baby's first nihilism worldview it gives his fans a false sense of enlightenment they often try to brag about. The "you have to have a pretty high IQ to appreciate Rick and Morty" meme has some sad truth to it. And like Joker, Rick is a power fantasy where a character does whatever the fuck he wants with next to no accountability which is often desired by those with limited accomplishments/freedoms in their real lives

This as well as the fact that idolising actually intelligent people requires actually having a passion, and putting forth the effort to apply your intelligence to said passion.
Characters like Rick, and the Joker who just make "we live in a society" observations require so much less from people to still feel "intelligent".
Also, pseudo-intellectuals love to paint their bitter worldview as truth.
