1. They get introduced to the other team
2. Other team starts kicking their ass with whatever theme or gimmick they have, or there's some kind of conflict that puts them at a disadvantage
3. They get their shit together and then make a comeback
I don't recall seeing much strategy or too much technical stuff. There's a little montage of the team in the lead just scoring a lot to indicate that they're winning usually.
A lot of the teams are PunchOut-tier stereotypes, which informs how they play.
I watched the one with the stage-magic themed team, and their gimmick was that they cheat with a rigged court, basically, and after realizing that they moved the game outside and beat them.
