Look, the entire complaint is that you shouldn't use a hearty, buttery fish to put in fish tacos. You don't put a really strong, hearty fish in fish tacos because fish tacos are already filled with all sorts of things like slaw and lime and usually a creamy, spicy aioli, so putting in actually decent fish would be a waste of good fish. Mexicans have plenty of fish dishes in their cuisine, but these dishes normally spotlight good fish when they can get it, whereas in fish tacos the fish is both fried and thrown together with a bunch of other flavors. It is literally a waste of fish to put good salmon in fish tacos. Salmon deserves better.
