I wish we got more usage of the infinity stones during fight scenes, the only time it got used was when Thanos used the Power Stone to blast Captain Marvel away. If Thanos used the Time Stone to stop time and do whatever he wanted he could've won, If he used the reality stone to make mindfuck everyone, there's probably huge number of possible ways Thanos could've won.
I think I was just wanted a more "abstract" battle, like the writers were originally going to include The Living Tribunal for the fight on Titan.
