It's a pattern that fits Star vs, adventure time, RWBY, friendship is magic, my little witch academia, Korra and many others that I can't name of the top of my head. It's a legit problem in cartoons and seemingly only cartoons and my guess is that it stems from shame, ambition and greed. Creators want to create the next big show that isn't just for kids. They want people to take them seriously and executives want to court the teenage audience. Because teenagers have more spending cash.

It happens when the writers start writing for the fans. Fans love deep lore and shipping and all that kind of shit that you can read/write long blog posts about. The show will usually have a tasteful amount of complexity to start and then the writers will get their dicks sucked by fans on the internet for it. Then you end up with a death spiral of pandering as writers start writing to get their dick sucked instead of producing a quality product.

There's also the fact that a lot of modern kid's shows have no respect for their nominal target audience. It's like no one wants to make a kid's show, they just want to make a show that's incidentally PG enough to get by the execs.
