Of the cancelled arcs we know about, there are 12.
-Son of Dathomir would've been four episodes and would've gone after the first 4 episodes of Dark Disciple and followed by the remaining 4 episodes of Dark Disciple.
-Crystal Crisis on Utapau - The story reels and voice work are all finished, so the episodes are watchable.
-Bad Batch - Being included in the new season. The story reels have been available for some time.
-Boba and Cad Bane - Some animated clips exist.
-Ahsoka's Walkabout - Cut down a little, but will be in the new season. I think it takes place chronologically right after she leaves the temple. The speeder bike crash they showed was the finished version of one of the unfinished clips that have been available for a while.
-Kashyyyk - Yoda and the Bad Batch help the Wookies fight off the droid army. There's at least one animated scene.
-Rex and R2 Top Gun - There's almost nothing to go on here, the episodes never even got a single scene animated. There would've been a damaged battle droid who Rex and R2 bond with.
-Yuuzhan Vong - Presumably the Thrawn arc where he meets Anakin, but the Vong were only on the drafting table and nothing was finalized; it was going to have an alien abduction sort of theme. It seems this arc was recycled into the on-going Thrawn books, but no vong as far as I know.
-Return to the Jedi - Deep under Coruscant below the jedi temple, there is a Sith Shrine. While Yoda and some others are busy with that Ahsoka has to stop a break in at the holocron vault. The zillo beast clones would've been used to fight the big fucking monsters around the shrine.
-Return to Mon Cala - Political stuff. The fish people are still deadlocked when Padme tries to make a move to limit Sheev's power.
-The Siege of Mandalore - Getting it in the new season.
