He respected them enough to use non-lethal means to fight them so 50% of them could live on protecting Earth after he did le snap. Thanos could have turned Strange into a pile of goo (or more likely incap'd him by tearing his limbs off or something so he could still get the Time Stone from him) with a Reality/Space/Power Stone combo at any time he wanted and Strange knew this. From looking into the future he knew the best outcome was to eventually hand over the Time Stone since they couldn't beat him head-on right then. Never mind portal exploits, Strange could have simply told Star-Lord to shut the fuck up if he wanted to go for their best chance to get the gauntlet off of him. But if Thanos wasn't woken up from the Mantis trance by Peter then he'd have escaped even more violently on his own accord and probably killed Tony and/or Nebula. In fact Strange only really put up a fight at all because Thanos would get suspicious if he coughed up the Time Stone immediately and might have killed them all to make sure there's no trickery going on.
Think about it. If Thanos hadn't gotten the Time Stone right then on Titan he'd have killed Tony and gone to Earth to get the Mind Stone to use it to control Strange to give him the Time Stone anyway. But if he didn't have the Time Stone right then and there when Wanda destroyed the Mind Stone he'd need to make sure the area wasn't disturbed so he can bring back the Time Stone after torturing it out of Strange anyway to rewind the Mind Stone. So he'd have killed every single hero in Wakanda rather than just 50% of them and then there'd be no one to reverse the snap in Avengers 4 other than fucking Hawkeye.
Infinity War is truly too deep for most viewers, you need very advanced planning ahead skills to follow the plot.
