Logistically speaking, it'd take much longer and be far more expensive for them to keep making longer animations that touch upon every possible power and ability when they can just instead focus on the stuff people expect to be in the fight.
Take the Pokemon Starter three-way battle, they calculated a bunch of ways the fight could've gone either way, but they decided to animate a fight where Charizard wins because he was the one that usually came out on top. They didn't animate every battle where one of the starters won, just one where the deisgnated winner comes out on top in the end. Again, not saying you're wrong, but it's something that we shouldn't really devote too much time getting hung up on when its really the research that makes or breaks these videos.
