I'd like to think a lot of it comes down to the game being a bit overwhelming in terms of difficulty at first. Once you get the hang of parrying combat becomes much much easier, but I can see how rough it is until you get to that point. I'd like to think that journalists and reviewers, who don't have much time on their hands to devote to a single game, aren't capable of putting in the time necessary to reach that point, so the only thing they can focus on is their own struggle
That being said, that's a very optimistic viewpoint. Instead of explaining that, they blame the game, and demand that there be an easy mode or that they cheat and somehow still consider themselves qualified to make a judgment call on the game.
I don't like Yahtzee much, but at least he's gone on record for some longer games like Persona 5 that he has only a week to play, review, and make a video about the game, so he had to crank down the difficulty so he could blow through it in time. The demand for accessibility, sadly, proves that it really is journalists being incapable of playing the games they are expected to review, rather than some time constraint
