Because it creates a form of resource scarcity. It's like asking why anyone could possibly like mana systems or health systems in games.
They're all just forms of resource scarcity that creates an element of strategic resource allocation/usage.
With FE, I like weapon durability in particular because it creates a form of equipment maintenance for the army as a whole. It forces me to think of not just how to win a single battle but how to plan for the long haul.
I think the biggest issue with FEA was how easily it let you buy unique weapons like Killing Edge and Brave weapons and the like.
I find it fun to equip a unit with a particular weapon and use its limited number of uses at the right time when the stakes are high or the situation is just right.
