First, if you plan on playing V5, ignore the rest of the post and ask yourself "why I am doing this?". If you plan on playing V20 or Revised, keep reading.
"Caitiff" references someone from an unkown clan, someone who doesn't know his own Sire, and thus, someone who doesn't exhibit the disciplines of his clan (because he doesn't know which ones are, and he doesn't get any instruction).
If your Sire openly recognizes you, and he's not a Caitiff, then you are not a Caitiff. You can PRETEND to be one if you go to another city, because, say, you don't want to give away your Clan (which sometimes means also your Sect).
Most vampires won't kill you just for being Caitiff, but they will humiliate you, consider you second class, and generally treat you like a piece of crap.
Caitiff means to be Clanless, and thus, without support from your own clan.
Now, if your Sire embraces you (the correct term for "turning you") and then he blood bonds you (basically slavery), then he can do with you whatever he wants. He can make you serve as his couch, and you'll beg for more.
If he doesn't bind you, however, there is no reason you MUST be loyal to him. You may be an ungrateful bastard, but then he'll probably hate you and make your life miserable.
And, regarding the whole "artist" bullshit, your Sire may embrace you for whatever the fucking reason he wants. Maybe he plans on shilling your work, selling your art and turning a profit for the next 50 years ("reclusive painter"). Or maybe he just wants to play "hide the salami" with you.
There are many reasons, and the stronger and better positioned your Sire is, the less reasons he needs to give others for your embrace.
