Honestly, most cartoons are more enjoyable when you're high, if the animation is bad you just laugh at it, but f it's any good you... I dunno, appreciate it more? Like the part of your brain that gets lit up by the actual illusion-of-life quality is simultaneously aware it's being tricked, and yet able to forget that in the moment, so moments of novelty feel like when you were a kid again.
So really, anything you enjoyed or would've enjoyed at any age. Uncle Grandpa stands out to me, but you should also go back and rewatch some 80s and 90s cel animated shows and movies, you'll start to notice all the little extra flourishes that've become too pricey for modern cartoons.
