I think people are wilfully ignoring that her role, so far, had been to be the distant dream girl Star helps Marco get, as part of Marco's character development arc of growing balls and confidence and daring to live a little, and also part of Star's arc of realising she's fallen for her safe kid best bud and moved on from her crush on Oscar. Then Jackie defied expectations by showing herself to be surprisingly chill and understanding and supportive and even holding her own in the fight against Ludo, instead of being the cliche airhead who finds Marco lame people were predicting her to be. Then she showed herself to be even more chill, friendly and supportive in Just Friends, and in Starcrushed she's actively a shoulder Marco can lean on and wants him to tell his troubles to her.
She's just now moved from unattainable dream girl to the role of Marco's supportive girlfriend. She's in the process of shifting into a different character, and we haven't seen how she'll do in this new position post Star's public confession. However while her old role has been completed, she can move the plot forward even more in this new role, and also gain more personality due to being in closer proximity to Marco. It's already been established that Marco now talks to her about his woes regarding his relationship with Star, so Marco will now have two people, Jackie and possibly Tom, to help him work through his emotions (or provoke him into realising things).
It's interesting to see what direction they'll write her going into, but imo there's a lot of narrative potential there that the writers would be fools to ignore there.
