Cable companies have an illegal price-fixing cartel where customers are broken up by area (like that King of the Hill episode where the 4 propane companies almost got busted for it), whereas streaming services are too numerous and destroying their entire business category by slicing the pie up too thinly (see the videogame crash of the 80s).
Companies nowadays seem willing to try basically anything except simple free-market, competition-based capitalism. Probably because if people started thinking sensibly, they'd fire the executives.
That still doesn't explain why you'd let the streaming service release something at a stupid hour, ahead of the TV airing. Now, simultaneously? sure. That makes sense. Videogames do that, the digital release is simultaneous with the physical. Sometimes they even mail out physical copies so they'll arrive on release day.
