Plus, I feel that people make too big a deal of what the fans want. A lot of the fans happily ship Elsanna even though it's crushed by canon. Shippers don't care about canon, or at least they're not stopped by their ship not ending up as canon after all.
So, imo there's no reason for Disney to mind what the smut-writing gay-shipping segment of the fanbase wants. Most of the money will come from plebs, parents of kids and total normies who like het romance and would find it awesome if Elsa landed a man. If some fans are gonna bitch on 4chan or tumblr because their gay headcanons didn't come true, who gives a shit?
So, I agree they won't make her gay because it's an idiotic move.
I just don't think they'll leave her single either, because that's narratively unsatisfactory. Elsa's big tragedy has been isolation and loneliness, being so afraid of her powers she couldn't even hug her mom since age 8 or so. So, the logical conclusion is her getting over that to the point where she's free to experience physical affection and open her heart to another. Eternal spinster Elsa is just too sad.
